By other names, glutamate is known as glutamic acid. This substance appears in most modern, manufactured foods. It appears as "flavor enhancer" in many manufactured foods, the acid is added to soft drinks to give them "zing", and is the toxic component of MSG, the favored flavor enhancer of many Asian foods. Soy and grains have a large dose of glutamate. Cheese and other dairy foods are also a source.
Glutamate is a GSH precursor, but it can manifest high levels of toxic stress in neurons, where it is a neurotransmitter, as it promotes ROS reactions. In effect, glutamate beyond an unknown threshold can cause the depletion of GSH. That is where the toxicity pathway operates.
